Per le birre a fermentazione alta si impiegano lieviti della famiglia dei Saccharomyces cerevisiae (il classico “lievito di birra”), che si attivano a una temperatura compresa tra i 15° e i 20° C., spesso rilasciando una grande varietà di aromi. Il processo di fermentazione è rapido (meno di una settimana) e a temperature più elevate. Una volta esaurito il processo, il residuo dei lieviti sale verso l’alto sotto l’effetto dell’anidride carbonica, galleggiando sulla superficie del liquido. Da qui il termine di “alta” fermentazione.
